Changing coupler types question

I am wondering is there a way to change couplers from the bumper and chain type used on the UK type cars to the American type coupler?

Yes, by editing the car's blueprint, see the developer docs.
But it will probably look silly because the car will still have bumpers, and the US couplers won't seem attached to the car.
