On the new sd75 addon there is a guage that reads 20 40 60 and 80 CFM, what does this mean?

Sounds like a fan gauge, but for what? I don't know. CFM is a measurement for airflow.
They exist everywhere. You may not see them, but they're there. Awww yeeeaaaahhhh, 20% Cooler! /)

Cubic Feet per Minute, but I don't know how that would apply to a train.

Here's a list of possible meanings for that acronym.

I don't own the SD75 model, but it sounds like you are looking at the Air Flow Meter (AFM) gauge that measure the air flow through the brake pipe. When you make a brake pipe reduction with the automatic brake handle, it reduces the brake pipe pressure. When you move the automatic brake handle back to the release position, the AFM shows the amount of air in Cubic feet per minute that is being put back into the brake pipe in order to recharge the air tanks on each car of the train. If you happen to have a pull apart or someone opens the brake pipe to atmosphere, you'll see this gauge peg and the train will go into an emergency application. I hope this answers your question?
