It's pretty easy.

Go into the timetable view. Select one of the stop at/ go via instruction you've set up (the hand symbol).
A new window appears. Here you can click into the performance field. Enter your performance (up to 200% is possible, still too low for some consists *!sad!* ).
Press enter.

Finished.

Wow I thought 100 was the max. I guess 200 is for TGV type lines I guess.

Actually, it's possible to go well over 200%. You can up into the thousands if you want.

Here's the video you asked for:

This train is running at 9000% efficiency *!!wink!!*

Same here. *!sad!*
Maybe there is a difference between standard and timetabled scenario mode? Can somebody confirm or bring light into this issue please?

EDIT: Ok, so I tried it the way it is showed in the video. Thank you ATSF.
Indeed, you cannot go over 200% in the timetable view. You need to select the "stop at/go via" instruction symbol above the locomotive. Doubleclick and you can change the percentage to a much higher value. !*brav*!

It works, got a 100 car train going at mainline speed on S&B route. (65mph to be exact)
