I just hope there are some steam servicing facilities otherwise there are going to be a lot of irritated owners with dropped fuseable plugs and exposed crown sheets.

That aside, they do look great...

This might be a silly question but, why do those refrigerator cars have Southern Pacific and Union Pacific markings on them?

PFE or Pacific Fruit Express was a joint company owned by Southern Pacific and Union Pacific (started in 1906). Thus the duel logo's. Western Pacific entered later on but their cars only had WP logo's. On the modern cars reporting marks were UPFE (Union Pacific Fruit Express) or SPFE (Southern Pacific Fruit Express). PFE assets were split in 1978 and is now, since UP took over SP, is a total UP subsidiary.

You have to remember, many railroads, while having different names, were controlled by the same person or company at one point. For instance the UP and SP were controlled by Harriman (president of both 1901 to 1909). In fact at the time of his death he controlled the Union Pacific, Southern Pacific, Saint Joseph and Grand Island, Illinois Central, and the Central of Georgia. Along with a few other non-railroad companies.
The same goes for eastern railroads. Ever notice how B&O, N&W, and PRR signals look the same? At one point the PRR had a 58%+ stake in each one.
