Can you post a screenshot of what you have done and do not like? Might be easier to point you in the right direction if I knew what you did/can do. Have you seen fields on any other route your trying to imitate? If so which route and where abouts on it. It is hard to explain and teach someone things about graphics with out some graphics to work with.

One thing that surprised me at the beginning is that ground textures are not rotatable. In Trainz you can make a plowed field texture (for example) run parallel to a fence line. Unless someone comes up with a splined ground texture that is low poly,in the style of a field of corn,wheat,etc,etc,we have to settle for painted textures that run a default direction.

You've got the general idea of it.
Some painted-textures look better than others. The one you were using is quite "flat" looking. Some have some "growth" (corn / wheat / oilseed) on them which give a bit of depth to them and may look better.
Some look better a bit farther away in the distance rather than being seen too close up.

I guess it's a matter of experimenting with what looks good. Maybe put in some more hedges, fences, shrubbery, brush around the boarders of the field and such to make it look a bit more visually appealing too. Add in the odd tractor, silo, barn, etc... too perhaps.

(the last pic is actually one of the garden vegetable-field "decals" that can be resized and rotated as you like.. probably looks a bit better at more of a distance though:

Glad to be of some help.
I also try to sometimes go for a bit of a mix and contrast of colors, textures and scenery too, which can help to make it more visually interesting.

You might also be able to find some field-assets to spruce things up a bit too. Here's another example (this pic from the very early version of my King's Arm route. I used some assets from SAD's Foliage Pack 1 at that time; http://sad-railworks.blogspot.ca/2010/0 ... eased.html though I don't use that foliage pack on the current version of my KAHD route)
