For example how do I switch the ice 3 train direction since it has 2 caba

Hit Ctrl and plus or minus.

Yes, or if you're using the F4 HUD, use the little arrow buttons when in cab view.
Best to set brakes and throttle etc to zero, before switching cabs at a standstill, or you might have some erroneous readings in the new cab view.
