see, leviathan has air brakes. notice the brakes between the drivers

now, see jupiter does not. look between jupiters drivers

In the mechanical drawings for Jupiter, the air brake system actually goes to a cylinder under the tender that works the brakes on the rear truck. The 200PSIG main air tank is located directly under the locomotive's cab floor.

Presumably Leviathan must have had some modifications, perhaps for improved safety.

Don't the people put their boot in front of the engine if there are no air brakes?

That's my understanding too.

It's easy to see why, from this: https://en.wikipedia.org/wiki/Westinghouse_Air_Brake_Company

The Westinghouse Air Brake Company (WABCO) was founded on September 28, 1869 by George Westinghouse in Pittsburgh, Pennsylvania.[1] Earlier in the year he had invented the railway air brake in New York state.

So there's no way "Jupiter" could have had air brakes in May 1869.

it could have if it was the train from back to the future 3Image

I have some ideas, yes, but all that is still a long way off. There's a lot more painting to do (several months worth of it).
