Eat like a King or Queen, Seldom discussed how about the food they served on those wonderful Dining cars. The B&O, And the C&O like there counterparts had some wonderfully lavish name trains and the food they served were the stuff of legends. We discuss many aspects of proto typical railroading, most of us could tell you what train @ what time on what road, but how many ever wondered what it was like to set in the diner, (hey nothing could be finer than to have your eggs in Carolina in the mooooooooooooooorning.) Sorry Couldn't pass that up.
So I thought I would just dig a little into some railroad history here are a couple of menu recipes From the C&O's George Washington and the Fast Flying Virginian
Hey maybe if you ask real nice your other might make some for ya!

First off Since I like Soup
Old fashioned vegetable soup
Formula 114 Quantity 1 gallon.
Ingredients
1/2 cup of lard.
2 cups of onions, sliced thin and small
2 cups of carrots " " " "
2 cups celery " " " "
2 cups of leeks you guessed it sliced thin and small
1 cup of cabbage cut in small squares.
2 bay leaves
1 pinch of ground thyme
1 clove of garlic Chopped
1 1/4 gallon of hot water
4 tablespoons of chicken base
1 no.2-1/2 Can Whole tomatoes
2 cups of potatoes sliced thin and small
2 cups of canned corn
2 tablespoons of freshly chopped parsley
Now this sounds easy
Procedure // Heat lard in the pot, add onions, carrots ,celery ,leeks ,cabbage ,bay leaves ,garlic, and thyme
Let simmer slowly for 5 minutes, do not allow to burn up! Add water chicken base tomatoes, potatoes. cook until the potatoes are done. Add corn Bring to a boil, skim off the fat that settles on top, check seasoning add parsley. And there you have some UM UM, good old fashioned veggie soup like they served in the diner on the GW and FFV. man I'm Hungry!! I'll post the main course later.

This recipe will make more than a gallon of soup. What is more interesting is that they ask for two onions, which seems proportional to the size, but then only one clove of garlic. I would expect two or three cloves.

It does sound tasty though.

The recipe came from the George Washington, I was susprised @ how easy it seemed to make, and man all that lard. I wonder can you still buy lard or was it outlawed or something by Jenny Craig.....

Not a big fan of celery, cabbage or tomatos. The rest sounds great! I only had a sandwich on the San Diegan, on the southwest Cheif I had a wonderful steak and mashed potatoes. !!*ok*!!

The Main Dish. Formula No. 200 Quantity 12 portions. From the C&O, Fast Flying Virginian
Baked Fish-White Wine sauce
4 pounds of cleaned Filet of Fish.
1/4 Cup Shallots, or Onion, Finely chopped.
1 cup of White Wine
1/2 Cup Of Water
Juice of 2 Lemons
2 tablespoons of Butter
5 Cups of cream sauce- Formula 901 (I guess I'll have to find Formula 901)
Salt & pepper to Taste
Freshly chopped Parsley or chives.
Procedure
Cut Fish into portion size, Place in a buttered shallow baking Pan
Sprinkle with Shallots or Onions
Add White Wine, water, lemon juice salt and pepper
Cook in hot oven till done About 8 minutes, when done pour liquid from baked fish into sauce pan.
cook down until reduced 1/3 of it's volume. Add cream sauce simmer for 2 minutes, check seasoning.
When serving pour sauce over each portion of fish. sprinkle with chopped parsley.
I don't eat a lot of Fish but this sound pretty good to me.

I have never had the pleasure of eating aboard a train, One of the many things about trains I always wanted to do.

Oh, I forgot the shrimp, was just cooked shrimp, cold, tails on, some dipping sauce (swear filter won't let me say it) and the Bloody Mary with three green olives. (NO CELERY!) Hey, on the train for hours, you gotta eat! !!*ok*!!

Shrimp Cocktail, man that sounds good. And having shrimp cocktail and really anything else while aboard a train just makes it that much better. I would think. I would of loved to be able to ride the Chief or Super chief and have some of Fred Harvey's food. Part of the Allure of the passenger service that once moved and fed this country. BTW for Dinner today I am cooking the above recipe the Baked fish and white wine. It will be ready about 5 pm eastern your all invited. We can sip wine, eat fish, and talk trains.

Anyways speaking of Shrimps, I have never been to Red Lobster, this was years ago after my sister moved in. It was Sunday afternoon after church, she took me to Red Lobster for the "All you can Eat Shrimp" Gata tell I was Shrimp heaven !!*ok*!!. I tried out Shrimp Alfredo and boy it was good! Somehow my sister figured out the recipe and cooks it at home. Just like red lobster. My bro and sis introduced me to Crab legs, never eatin that before. mmMMM

"back head cooking" What the heck is that? I can do a Cornish Game Hen in my toaster oven (I don't have a real oven here) in about 20 minutes.

I like Red Lobster. Shrimp, crab and lobster are my favorite food groups. Along with those cheese biscuits! They send me an e mail with coupons all the time. !!*ok*!! Oh, and the clam chowder! Awesome!
